The Maceration is an orange wine made from Gewurtztraminer which is delicate, fragrant and comforting. It is made from old vines from the Lakeview Vineyard in the Twenty Mile Bench appellation. The grapes were hand harvested at full maturity and were sorted to keep the best quality fruit. 80% of the bunches were destemmed and put into a tank for cold maceration over a period of 10 days. Fermentation started after 7 days with indigenous yeast. After pressing off, the wine was transferred to neutral French oak barrels where it continued fermenting and aging for a period of 6 months. The end result is a wine that has notes of English breakfast tea and citrus.
